SATURDAY SNACK: Banana Fritters

Background: The banana is known for being one of the most important foods in the world. Its good for the heart, strengthens your bones, has ridiculously generous amounts of vitamins and minerals that boost your immune system, good for eyesight and lots of other stuff. Most importantly it's delicious!

The banana fritter is my favourite snack and incidentally the first thing i learned how to cook. I watched my mother make it for years as a kid and liked it so much that i wanted to be able to eat some without dragging her to the kitchen every other day.

Its scrumptious, easy and quick to make and can be served for breakfast, dessert or as a snack.

Average Time: 10 mins
Ingredients: (To make about 12 or more large fritters)

  • 6 ripe bananas
  • 1 cup of regular kitchen flour
  • 2 eggs

Directions:
  • Blend or mash the bananas in a bowl and mix the eggs and flour into the banana mixture properly till it forms a paste
  • Heat up 2-3 tablespoons of cooking oil in a frying pan.
  • Use an average sized serving spoon to place the banana mixture into the reasonably hot oil. (The recommended size per fritter should be 3/4 of the surface of the serving spoon)
  • Fry the fritters until both sides are crisp and as brown as in the picture above. You may need to add more oil to complete the frying mind you.
  • (Be careful not to turn the heat up too much or else the inside may not cook properly)
